- 8-inch baked pie shell
- 3/4 c. sugar
- 1/4 c. cornstarch
- 1 c. water
- 1 tsp. grated lemon rind
- 1/2 c. lemon juice
- 2 slightly beaten egg yolks
- 4 oz. cream cheese
- 2 egg whites
- 1/2 c. sugar

2saucepan, combine 3/4 cup sugar, cornstarch, water, lemon rind, lemon juice and egg yolks.

3Cook over medium heat; stir constantly until thick.

4Remove from heat.

5Add 4 ounces cream cheese; blend well.

6Beat egg whites.

7Add 1/2 cup sugar (beat stiff).

8Fold into lemon mixture.

9Spoon into pie shell; chill for 2 hours.
