Lemon Creamed Rice

- 12 cup medium grain white rice
- 600 ml milk
- 12 cup cream
- 13 cup sugar
- 1 lemon, zest of, grated
Directions

1Place the rice into a saucepan with the milk and lemon zest.

2Bring to the boil, reduce heat then simmer, covered, for 30 minutes or until the rice is tender and all the milk has been absorbed.

3Stir frequently to prevent the rice sticking to the base of the saucepan.

4Remove from heat, stir in the cream and sugar and serve with a spoonful of ice cream.

5Garnish with a slice of lemon and a fresh mint leaf.

6Other forms of sweetener can be used instead of sugar if prefer.
