Lemon Crumb Bars

Ingredients
- 1 (18 1/4 ounce) package lemons or 1 (18 1/4 ounce) package yellow cake mix
- 12 cup butter or 12 cup margarine
- 1 egg
- 2 cups finely crushed saltine crumbs
- 3 egg yolks
- 1 (300 ml) caneagle brand sweetened condensed milk
- 12 cup lemon juice
Directions

1Preheat oven to 350F Grease 15x10x1-inch baking pan., In a large mixing bowl, combine cake mix, butter and 1 egg; mix well.

2(Mixture will be crmbly.)

3Stir in cracker crumbs.

4Reserve 2 cups crumb mixture.

5Press remaining crumb mixture firmly on bottom of prepared pan.

6Bake 15 minutes.

7Meanwhile, in medium mixing bowl, combine egg yolks, Eagle Brand and lemon juice; mix well.

8Spread evenly over baked crust.

9Top with reserved crumb mixture.

10Bake 20 minutes or until firm.

11Cool cut into bars.

12Store in refrigerator.
