  • 3 whole Cod Fillets, About 3 Inches Wide Each And Skin Removed
  • 3 Tablespoons Butter
  • 2 cloves Garlic, Crushed
  • 1 cup Bread Crumbs
  • 1 Lemon, Zest And Juice
  • 1 teaspoon Dried Oregano
  • 2 Tablespoons Fresh Chopped Parsley
  • 1/2 teaspoons Salt
  • 1/2 teaspoons Fresh Ground Black Pepper

    Preheat oven to 350 degrees F. Place cod fillets in an oven proof dish and set aside.

    In a small skillet set over low heat, melt butter and add garlic.

    Cook for about 2 minutes until garlic is sizzling.

    Remove from heat.

    In a large bowl, combine bread crumbs, lemon zest, dried oregano, parsley, salt, pepper and garlic butter.

    Give a good stir until it is combined.

    Squeeze lemon juice over cod fillets and top each fillet with the bread crumb mixture.

    Bake for about 20 minutes until cod is cooked through and the topping is golden brown and crispy.
