  • 1 cup sugar
  • 1/4 cup flour
  • dash of salt
  • 2 Tbsp. oil
  • 2 tsp. lemon peel
  • 1/3 cup lemon juice
  • 1 1/2 cup milk (scalded)
  • 3 beaten egg yolk
  • 3 stiffly beaten egg whites

Directions

    Combine sugar, flour, salad oil and salt.

    Add lemon peel and juice. Stir milk into egg yolks, add lemon mixture.

    Fold in egg whites. Pour into 8-5 oz. custard cups.

    Set cups in shallow pan.

    Pour hot water around them 1 inch deep.

    Bake at 325° for 40 minutes. Serve warm or chilled.
