  • 1 c. sugar
  • 1/2 c. butter
  • grated lemon rind and strained juice (enough to make 1/2 c. juice)
  • 3 eggs, beaten

Directions

    Add eggs to mix.

    Mix all ingredients together.

    Cook gently over low heat until thick, but still falls easily from spoon.

    Do not boil or let mixture separate.

    Cool; store in jar in fridge.
