Lemon Curd Pudding

  • 7/8 cup caster sugar
  • 7 tablespoons softened butter
  • 3/4 cup self raising flour
  • 2 eggs
  • zest lemon
  • 1 teaspoon vanilla extract
  • 4 tablespoons lemon curd

Directions

    Mix the sugar and butter together in a medium microwave proof bowl.

    Add the flour, eggs, lemon zest and vanilla together till creamy.

    Microwave on high for 3 minutes, until risen and set all the way through. Leave to stand for a minute.

    Meanwhile, heat the lemon curd for 30 seconds in the microwave and stir until smooth.

    Place a plate on top of the bowl with the pudding and tip over. The pudding should easily fall out onto the plate. If needed you can use a spatula to carefully separate the pudding from the sides.

    Pour all over the top of the cake and serve.
