Lemon Curd Pudding

- 7/8 cup caster sugar
- 7 tablespoons softened butter
- 3/4 cup self raising flour
- 2 eggs
- zest lemon
- 1 teaspoon vanilla extract
- 4 tablespoons lemon curd
Directions

1Mix the sugar and butter together in a medium microwave proof bowl.

2Add the flour, eggs, lemon zest and vanilla together till creamy.

3Microwave on high for 3 minutes, until risen and set all the way through. Leave to stand for a minute.

4Meanwhile, heat the lemon curd for 30 seconds in the microwave and stir until smooth.

5Place a plate on top of the bowl with the pudding and tip over. The pudding should easily fall out onto the plate. If needed you can use a spatula to carefully separate the pudding from the sides.

6Pour all over the top of the cake and serve.
