  • 2 Tbsp. soft butter
  • 1 1/2 c. sugar
  • 1/3 c. flour
  • 1/4 tsp. salt
  • 1/2 c. lemon juice
  • 1 tsp. lemon rind, grated
  • 3 egg yolks
  • 1 1/2 c. milk
  • 3 egg whites, stiffly beaten

Directions

    Cream butter and sugar; add flour and salt, then lemon juice and rind.

    Stir in egg yolks and milk (beaten together).

    Fold in egg whites.

    Pour into a greased casserole; set casserole in pan of water and bake in oven at 375° for 45 minutes.
