- 2 Tbsp. soft butter
- 1 1/2 c. sugar
- 1/3 c. flour
- 1/4 tsp. salt
- 1/2 c. lemon juice
- 1 tsp. lemon rind, grated
- 3 egg yolks
- 1 1/2 c. milk
- 3 egg whites, stiffly beaten
Directions

1Cream butter and sugar; add flour and salt, then lemon juice and rind.

2Stir in egg yolks and milk (beaten together).

3Fold in egg whites.

4Pour into a greased casserole; set casserole in pan of water and bake in oven at 375° for 45 minutes.
