Ingredients

  • 2 c. water
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/3 c. cornstarch
  • 2 eggs, separated
  • 1/4 c. lemon juice
  • Grated rind of 1 lemon
  • 1 baked Angel Food cake

Directions

    In a saucepan, bring water to the boiling point.

    Mix together the sugar, cornstarch and salt, add them to the water and cook until mixture is thick and clear, set aside.

    Beat the egg yolks and add the lemon juice and grated lemon rind; mix well. Add the egg mixture to the cornstarch mixture.

    Break the Angel Food cake into chunks and add them to the lemon mixture.

    Fold together until well mixed.

    Pour into a buttered Angel Food cake pan; cool.

    Serve with whipped cream or ice cream.
