Lemon Delight Pie

  • 1 (6 oz.) pkg. Jell-O lemon pudding and pie filling
  • 3/4 c. sugar
  • 3 c. water
  • 2 eggs
  • 1 baked 9-inch pie shell or crumb crust, cooked
  • 2 c. thawed Cool Whip

Directions

    Prepare filling mix as directed on package for pie.

    Cool 5 minutes, stirring once or twice.

    Measure 1 cup filling into a bowl.

    Place plastic wrap directly on surface and cool thoroughly. Pour remaining filling into pie shell.

    Chill.

    Stir cooled filling until smooth.

    Blend in 2 cups whipped topping.

    Spoon over filling in pie shell.

    Chill 3 hours.

    Garnish with additional topping and lemon slices, if desired.
