- 1/2 c. fine dry breadcrumbs
- 2 tsp. grated lemon rind
- 2 Tbsp. country-style Dijon mustard
- 3 Tbsp. lemon juice
- 6 (4 oz.) skinned, boned chicken breast halves
- 1 Tbsp. lime juice
- vegetable cooking spray
- lemon slices (optional)
Directions

1Combine breadcrumbs and rind, stirring well.

2Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.

3Dredge chicken in breadcrumb mixture.

4Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray; sprinkle with any remaining breadcrumb mixture.

5Bake, uncovered, at 375° for 15 minutes.

6Turn chicken and bake an additional 15 minutes or until done.

7Garnish with lemon slices, if desired.
