  • 1/2 c. fine dry breadcrumbs
  • 2 tsp. grated lemon rind
  • 2 Tbsp. country-style Dijon mustard
  • 3 Tbsp. lemon juice
  • 6 (4 oz.) skinned, boned chicken breast halves
  • 1 Tbsp. lime juice
  • vegetable cooking spray
  • lemon slices (optional)

Directions

    Combine breadcrumbs and rind, stirring well.

    Combine lemon juice, mustard and lime juice; brush mixture over both sides of chicken.

    Dredge chicken in breadcrumb mixture.

    Place chicken in a 13 x 9 x 2-inch baking dish coated with cooking spray; sprinkle with any remaining breadcrumb mixture.

    Bake, uncovered, at 375° for 15 minutes.

    Turn chicken and bake an additional 15 minutes or until done.
