- 1 lb. margarine
- 1 lb. light brown sugar
- 6 eggs, divided
- 1 1/2 oz. lemon extract
- 4 c. flour
- 1 tsp. baking powder
- 1/2 lb. candied pineapple, cut up
- 1/2 lb. candied cherries, cut up
- 1 lb. pecans, chopped
Directions

1Cream together margarine and brown sugar.

2Add egg yolks and beat good.

3Add lemon extract and beat, then add 2 cups flour and baking powder.

4Mix pineapple, cherries, pecans and 2 cups flour and add to first mixture.

5Beat egg whites and fold in.

6Let stand overnight.

7Pile gently in pan and cook at 250° for 2 1/2 hours.
