  • 2 1/2 c. fresh bread crumbs
  • 4 garlic cloves, minced
  • 1/2 c. chopped fresh parsley
  • 6 Tbsp. grated Parmesan cheese
  • 1/4 c. chopped fresh thyme or 1 Tbsp. dried thyme
  • 1/2 tsp. salt
  • 6 Tbsp. butter or margarine, melted and divided
  • 1 (3 to 4 lb.) salmon fillet or other fish fillets
  • 2 tsp. grated lemon peel

    In a bowl, combine bread crumbs, garlic, parsley, cheese, thyme, lemon peel and salt.

    Add 4 tablespoons butter and toss lightly to coat.
