Lemon Ice Cream Pie

  • 3 egg yolks, beaten until thick and lemon colored
  • 1/4 c. lemon juice
  • 1/2 lemon rind, grated
  • 1/8 tsp. salt
  • 1/2 c. plus 1 Tbsp. sugar
  • 3/4 c. crushed vanilla wafer crumbs
  • 3 egg whites, beaten stiff
  • 1 c. whipping cream

    Combine first 5 ingredients and cook in double boiler until creamy.

    Let cool.

    While this cools, crush vanilla wafers for 3/4 cup.

    Beat egg whites stiff.

    Fold in custard; whip whipping cream and fold in.
