Ingredients
- 1 3/4 c. flour
- 1 tsp. baking powder
- 3/4 tsp. baking soda
- 1/4 tsp. salt
- 3/4 c. sugar
- 1 Tbsp. grated lemon rind
- 1 egg, beaten
- 8 oz. lemon yogurt
- 1/4 c. plus 2 Tbsp. butter, melted
- 1 Tbsp. lemon juice
- Glaze (recipe follows)
Directions

1Combine first 6 ingredients in a large bowl; make a well in center of mixture and set aside.

2Combine egg, yogurt, butter and lemon juice; stir well.

3Add to dry ingredients; stir until just moistened.

4Spoon batter into greased muffin pans, filling 3/4 full.

5Bake at 400° for 20 minutes or until lightly browned.

6Cool in pans for 5 minutes.

7Remove from pans and, while warm, prick tops with a toothpick; pour glaze over muffins.

8Yield: 16 muffins.
