Ingredients
- 1/2 c. softened butter or margarine
- 1/2 c. granulated sugar
- 1 Tbsp. grated lemon peel
- 2 Tbsp. milk
- 2 eggs, separated
- 3 Tbsp. lemon juice
- 1 c. unsifted flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/3 c. chopped pecans or walnuts
- 1 tsp. ground nutmeg
Directions

1In large mixer bowl, cream butter with sugar until light and fluffy.

2Gradually blend in lemon peel, milk and egg yolks.

3Add lemon juice.

4Combine flour, baking powder and salt.

5Add all at once to butter mixture.

6Mix until blended.

7Beat egg whites to soft peaks.

8Blend into batter.
-
9Combine with remaining ingredients.

10Divide among 12 greased or Pam sprayed medium-size muffin cups.

11Bake at 375° for 15 minutes or until done.
