- 2 c. margarine
- 1 c. sugar
- 2 c. all-purpose flour
- 3 c. Quaker oats, uncooked
- 1 Tbsp. grated lemon peel
- 1 tsp. vanilla
- powdered sugar
Directions

1Beat margarine and sugar until creamy.

2Add remaining ingredients except powdered sugar. Mix well. Cover and chill 30 minutes.

3Heat oven to 350°.

4Shape dough into 1-inch balls. Place on ungreased cookie sheet.

5Flatten with bottom of glass dipped in powdered sugar. Bake 12 to 15 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet. Remove to wire rack. Cool completely. Sprinkle with powdered sugar, if desired.
