- 3 Tbsp. cornstarch
- 1 1/2 c. sugar
- 3 egg yolks
- 1/2 tsp. salt
- 1 1/2 c. boiling water
- 1 1/2 lemons (juice only)
- 3 egg whites
- 3 Tbsp. sugar
Directions

1Mix cornstarch and 1 1/2 cups sugar.

2Add juice of lemons. Beat egg yolks and add to mixture.

3Slowly add boiling water.

4Cook until thick.

5Add salt.

6Pour in baked pie crust.

7Beat egg whites until they stand in peaks.

8Add 3 tablespoons of sugar and a sprinkle of salt.

9I also add a few drops of vanilla or lemon juice to the meringue.

10Pile on lemon filling in crust.

11Brown in oven. This recipe takes either 1 1/2 or 3 of each ingredient.
