- 3 egg yolks
- juice of 1 1/2 lemons
- grated rind of 1 lemon
- 1 c. sugar
- 2 heaping Tbsp. flour
- 1/4 tsp. salt
- 1 c. evaporated milk
- 1/4 c. melted butter
- 3 egg whites
- 8-inch unbaked pie shell
Directions

1Beat egg yolks until thick.

2Add lemon juice and rind.

3Add sugar, flour and salt.

4Blend together and add evaporated milk and melted butter.

5Beat egg whites until dry.

6Fold into pie shell. Bake at 400° for 10 minutes.

7Reduce to 325° for 30 minutes.
