- 1 c. sugar
- 1 1/2 c. water
- 4 Tbsp. cornstarch
- 3 egg yolks
- 1/3 c. fresh lemon juice
- 1 Tbsp. grated lemon rind
Directions

1Cook sugar, water and cornstarch until thick.

2Beat egg yolks slightly.

3Add a bit of the cooked mixture to egg yolks and continue on so the egg yolks don't cook and get stringy.

4Add fresh lemon juice and grated lemon rind.

5Cook 1 minute.

6Pour into a cooled, baked pastry shell.
