- 2 c. water
- 1 c. sugar
- 1/4 tsp. salt
- 1/3 c. cornstarch
- 2 egg yolks
- 1/4 c. lemon juice or juice from 1 lemon
- grated rind of 1 lemon
Directions

1Mix water, salt, sugar and cornstarch.

2Bring slowly to a boil.

3When it begins to boil and thickens, add the second mixture of yolks, juice and rind.

4Cook about 3 minutes longer.

5Pour into baked pie shell.

6Make meringue from the 2 egg whites.

7Beat them until they hold a soft peak.

8Add 4 tablespoons sugar, one at a time.

9Spread on top of filling and bake about 20 minutes in a 325° oven.
