Ingredients

  • 2 c. water
  • 1 c. sugar
  • 1/4 tsp. salt
  • 1/3 c. cornstarch
  • 2 egg yolks
  • 1/4 c. lemon juice or juice from 1 lemon
  • grated rind of 1 lemon

Directions

    Mix water, salt, sugar and cornstarch.

    Bring slowly to a boil.

    When it begins to boil and thickens, add the second mixture of yolks, juice and rind.

    Cook about 3 minutes longer.

    Pour into baked pie shell.

    Make meringue from the 2 egg whites.

    Beat them until they hold a soft peak.

    Add 4 tablespoons sugar, one at a time.

    Spread on top of filling and bake about 20 minutes in a 325° oven.
