Ingredients

  • 2 c. water
  • 3 Tbsp. vinegar
  • 4 egg yolks
  • 1 1/2 to 2 c. sugar
  • 4 Tbsp. flour (or 3 Tbsp. cornstarch)
  • 1 1/2 Tbsp. Blair lemon flavoring
  • 1 Tbsp. butter
  • 1/4 tsp. salt
  • 4 egg whites
  • 2 Tbsp. sugar

Directions

    Put water and vinegar in saucepan and bring to a boil.

    Beat together egg yolks, flour and sugar.
  3. 3
    Add a small amount of boiling liquid and blend well.
  4. 4
    Stir mixture quickly into boiling liquid and continue to cook and stir until thick.

    Remove from heat and add Blair lemon flavoring, butter and salt.

    Pour into baked shells.

    Makes 2 pies.

    Beat egg whites until stiff.

    Gradually add 2 tablespoons sugar.

    Put on pies, being careful to seal edges. Bake in preheated 350° oven for 15 minutes until browned.
