- 1 1/8 c. sugar
- 6 Tbsp. cornstarch
- 1 1/2 c. boiling water
- 3 egg yolks
- 3 Tbsp. butter
- 4 Tbsp. lemon juice (fresh)
- 1 1/2 Tbsp. grated lemon rind
- pulp scraped from inside lemon
Directions

1Mix sugar and cornstarch.

2Stir in boiling water, cook over direct heat, stirring constantly until mixture thickens and boils. Set over boiling water and cook 10 minutes longer.

3Beat egg yolks slightly, beat in a little of hot mixture and add to hot mixture in double boiler.

4Cook 5 minutes, stirring constantly.

5Remove from hot water.

6Blend in butter, lemon juice, rind and pulp.

7Cool.
