  • 1 (9-inch) unbaked pie shell
  • 1 c. sugar
  • 3 Tbsp. cornstarch
  • 1 1/2 c. cold water
  • 3 egg yolks
  • 1/4 c. lemon juice, fresh squeezed

Directions

    Combine sugar, cornstarch, water, egg yolks and lemon juice. (Set egg whites aside to be used for meringue.) Cook over medium heat until thickened, stirring constantly.

    Pour into baked pie shell and cool.
