- 1 c. finely chopped celery
- 1 c. finely chopped green onions with tops
- 1/2 c. butter
- 2 Tbsp. grated lemon peel
- juice of 1 lemon
- 1 tsp. salt
- 1/4 tsp. pepper
- 3 c. cooked rice
- sliced almonds
Directions

1Saute vegetables in butter until tender and clear.

2Toss gently with rice.

3Add the lemon peel, the juice of one lemon, salt and pepper.

4Heat thoroughly over low heat or in microwave.

5Sprinkle top with almonds and serve.
