- 3/4 c. sugar
- 2 Tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 c. milk
- 2 slightly beaten egg yolks or 1 well beaten egg
- 2 Tbsp. butter
- 1/2 tsp. vanilla
- 1/3 c. lemon juice
- 1 tsp. grated lemon peel
Directions

1In saucepan, blend sugar, cornstarch and salt.

2Add milk. Cook and stir over medium heat until thickened and bubbly.

3Cook and stir 2 minutes more.

4Remove from heat.

5Stir small amount of hot mixture into yolks or beaten egg.

6Return to hot mixture; cook and stir 2 minutes more.

7Remove from heat; blend in butter, vanilla, lemon juice and lemon peel.

8Pour into sherbet dishes; chill.

9Makes 4 to 5 servings.
