- 1 Cup Sugar
- 4 Tablespoons Flour
- 2 Tablespoons melted Butter
- 1/8 teaspoon Salt
- Juice of 1-1/2 Lemons
- Grated rind of 1 Lemon
- 3 Eggs separated
- 1-1/2 Cup Milk
- Whipping Cream (opt)
Directions

1Mix together first 6 ingredients. Beat yolks well and add to lemon mixture. Then add milk. Beat egg whites till stiff and fold into batter. Pour into buttered ramekins. Set ramekins in baking pan containing boiling water. Bake at 360 degrees for 45 minutes or until lightly brown on top. Serve warm or cold. Can be topped with whipped cream. May be made a day ahead.
