- 2 c. flour
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 3/4 c. sugar
- 1 c. fresh raspberries
- 2 large eggs, beaten
- 1 c. half and half
- 1/2 c. vegetable oil
- 1 tsp. lemon extract
Directions

1Combine first 5 ingredients in a large bowl; make a well in center of mixture.

2Combine eggs and next 3 ingredients; add to dry ingredients and stir just until moistened.

3Place paper baking cups in muffin pan and coat with cooking spray.

4Spoon batter into paper cups, filling 3/4 full.

5Bake 20 to 22 minutes at 425°. Yields 1 1/2 dozen.
