Lemon Roast Potatoes

  • 1 12 kg potatoes (peeled and chopped into chunks)
  • 1 lemon, juice of
  • 2 tablespoons semolina (ground)
  • low-fat cooking spray

Directions

    Preheat oven to gas mark 7, bring a pan of water to boil and add the potatoes and some salt.

    Simmer for 10 minutes.

    Drain from pan and shake to roughen the edges.
  4. 4
    Spray with low fat cooking spray and sprinkle over semolina shaking to lightly coat the potatoes.
  5. 5
    Roast in oven for 30 mins sprinkling over lemon juice half way through cooking time.
