- 1/2 c. sugar
- 4 tsp. cornstarch
- 1 c. water
- 1 slightly beaten egg yolk
- 1 tsp. grated lemon rind
- 3 to 4 Tbsp. lemon juice
- 1 Tbsp. butter
Directions

1Combine sugar and cornstarch in saucepan.

2Gradually add water, blending until smooth.

3Cook over high heat, stirring constantly, until thick.

4Reduce heat and continue cooking until clear, 5 to 7 minutes.

5Remove from heat.

6Blend in slightly beaten egg yolk to which a little of the hot mixture has been added.

7Cook for 2 minutes.

8Remove from heat.

9Add lemon rind, lemon juice and butter.
