Lemon Sponge Pie

- 3 Tbsp. softened butter or margarine
- 1 1/2 c. sugar
- 4 eggs, separated
- 3 tsp. flour
- dash of salt
- 1 1/4 c. milk
- grated lemon peel
- 1/3 c. lemon juice
- 1 (9-inch) unbaked pie shell
Directions

1Cream together butter and sugar until fluffy.

2Beat in egg yolks, flour, salt, milk, lemon peel and juice.

3In another bowl, with clean beaters, beat egg whites until stiff, but not dry. Fold into first mixture.

4Pour into pie shell.

5Bake at 375° for 15 minutes.

6Reduce heat to 300° and bake 45 minutes longer or until top is golden and knife inserted in the top comes out clean. (This pie has a mild lemon flavor.)
