- 1/4 c. margarine
- 1 c. sugar
- 3 Tbsp. flour
- 3 eggs, separated
- 1/2 c. lemon juice
- 1 Tbsp. grated lemon rind
- 1 1/2 c. milk
- pastry for 9-inch pie
Directions

1Cream well margarine and sugar.

2Add sugar and flour; mix well.

3Add egg yolks, lemon juice and rind.

4Beat well.

5Slowly add milk while beating.

6Fold in beaten egg whites.

7Pour into pastry-lined pie plate.

8Bake 12 minutes at 425°.

9Reduce heat to 325° and bake for 30 minutes longer.
