- 3 Tbsp. butter or oleo
- 1/2 c. sugar
- 2 eggs, separated
- 1 c. milk
- 1 rounded Tbsp. flour
- juice and grated rind of 1 lemon
Directions

1Beat egg whites until stiff.

2Cream butter and sugar until light and fluffy.

3Add flour, juice and rind of lemon.

4Beat egg yolks; add milk.

5Add beaten egg whites gently to mixture.

6Pour into unbaked pie crust.

7Bake at 350° for 30 minutes or until center is almost set.
