Ingredients
- 2 eggs, beat yolks and then beat whites
- 1 c. sugar
- 3 Tbsp. all-purpose flour
- finely grated rind of 1 lemon
- juice of 1 lemon
- 2 Tbsp. melted butter
- 1 c. milk
- pinch of salt or 1 tsp.
- 1 unbaked 9-inch pie shell
Directions

1Combine sugar and flour.

2Stir in lemon juice and rind; beat in egg yolks, then melted butter.

3Stir in milk.

4Beat egg whites with salt until fairly stiff peaks form, then fold into lemon mixture until no streaks of white show.

5Pour into unbaked pie shell.

6Bake at 450° for 10 minutes, then at 350° for 20 minutes or until crust is lightly browned and filling puffy and touched with brown.

7Cool 15 minutes before cutting.

8Good warm or cold.
