  • 1/4 c. flour
  • 1 c. sugar
  • 1/2 tsp. salt
  • 1 c. milk
  • 2 Tbsp. melted butter
  • yolks of 3 large eggs, beaten
  • rind of 1 lemon, grated
  • 3 Tbsp. lemon juice
  • 3 egg whites, stiffly beaten

Directions

    Combine flour, sugar and salt.

    Add milk, butter and egg yolks. Add lemon rind and juice.

    Fold in egg whites.

    Pour in a baking dish; set pan in hot water.

    Bake on low rack of oven for 1 hour at 325°.

    Cake should be light brown on top.
