  • 3/4 c. butter
  • 1/3 c. powdered sugar
  • 1 1/2 c. flour
  • 3 eggs
  • 1 1/2 c. sugar
  • 3 Tbsp. flour
  • 3 Tbsp. grated rind and juice of fresh lemon

Directions

    Mix butter, powdered sugar and 1 1/2 cups flour until crumbly like pie dough.

    Bake in small oblong pan at 350° for 20 minutes. Beat eggs slightly and then add sugar, 3 tablespoons flour and grated rind and juice of fresh lemon.

    Cover baked crust with egg mixture and bake 20 minutes or until firm.

    Sift powdered sugar over.
