- 1/2 cup Margarine or Butter (softened)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1 tbsp Vanilla Extract
- 1 cup Granulated Sugar
- 2 tsp Lemon Peel (Optional)
- 2 tbsp Lemon Juice
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 Eggs
Directions

1Preheat oven to 350

2Mix flour, margarine, powdered sugar and vanilla extract thoroughly in a small bowl.

3In an ungreased 8x8x2 pan, press the dough evenly with hands (If dough is sticky, flour fingers).

4Bake for 20 minutes.

5Beat the lemon mixture ingredients in a medium bowl on medium speed until light and fluffy.

6When crust is done, pour lemon mixture onto the hot crust.

7Bake for 25 minutes (or until there is no indentation when touched lightly in the center).

8Sprinkle the top with powdered sugar (optional)

9Let stand until cool.

10Cut into 1 1/2 inch squares.
