Lemon-Tarragon Chicken

  • 4 boneless, skinless chicken breasts
  • 2 Tbsp. flour
  • 1 1/2 tsp. tarragon
  • 2 cloves garlic
  • 1 small jar pimentos
  • 1 c. mushrooms
  • 1 can artichokes
  • 1 lemon
  • salt and pepper to taste

Directions

    Flatten or cut the chicken breasts into strips.

    Dredge chicken lightly in flour, tarragon , salt and pepper.

    Melt a small amount of oleo in pan.

    Saute garlic and add chicken, cook for 5 minutes.

    Add pimentos, mushrooms and artichokes; simmer about 5 minutes.

    Add enough cornstarch and water thickener to make sauce; add juice of 1 lemon.

    Serve over rice or noodles.
