  • 1 Tbsp. cornmeal
  • 1 1/2 c. sugar
  • 3 eggs, beaten
  • 3 Tbsp. margarine, melted
  • 3 Tbsp. milk
  • 1/2 c. lemon juice
  • 1 tsp. lemon rind
  • 1 (9-inch) unbaked pie crust

Directions

    Whisk eggs, sugar, cornmeal and flour together.

    Mix melted margarine, milk, lemon juice and rind; then add together.

    Pour into pie crust and bake in a 375° oven for 35 to 40 minutes.
