- 1 stick margarine
- 1 (3 oz.) pkg. cream cheese
- flour
- 1 egg
- 1 c. sugar
- juice and grated rind of 1 1/2 lemons
- 1 Tbsp. melted butter
Directions

1Blend margarine with cream cheese. Add 1 cup flour; mix thoroughly. Shape into small balls. Press into small muffin cups. Beat egg. Add 1 tablespoon flour and remaining ingredients. Pour into pastry shells; fill 2/3 full. Bake at 350° for about 20 minutes or until filling is almost set. Reduce oven temperature to 250°. Bake for 10 minutes longer or until filling is firm. Cool in muffin cups.
