Lemony Salmon Mixed Sushi

- 700 grams Rice
- 70 grams Cut salmon (sashimi grade)
- 2 slice Shiso leaves
- 1 tbsp White sesame seeds
- 2 1/2 tbsp Lemon juice
- 2 tbsp Vinegar
- 1 1/2 tbsp Sugar
- 1 little less than 1/2 teaspoon Salt
Directions

1Make sushi vinegar.

2Put all ingredients in a bowl and microwave for about 20 seconds without covering to melt the sugar and salt.

3Add the sushi vinegar to hot, freshly-cooked rice little at a time and mix the rice like you are cutting the rice with a rice ladle.

4Let cool off.

5Prepare the other ingredients while cooling down the sushi rice from 2.

6Finely chop the shiso leaf.

7Cut the salmon into bite sizes.

8Add shiso leaves and sesame seeds to the sushi rice from 2 and let it cool off completely.

9Add the lemon juice and combine.

10Add the cut salmon from Step 4, then it is done.

11Top with salmon roe for a lavish presentation.
