Ingredients
- 1 large onion, chopped
- 4 cloves garlic, minced
- 1 Tbsp. oil
- 3 c. boiling water
- 1 c. dry lentils, washed
- 1 Tbsp. dried mint
- 1 Tbsp. curry powder
- 1 tsp. turmeric
- 1 tsp. cumin
- 1 tsp. salt
- 1 c. Velveeta cheese, cubed
- 1 small jar hot picante sauce
Directions

1In a medium sized pan, fry onion and garlic in oil until brown.

2Add water, lentils and the remaining ingredients except cheese and picante sauce.

3Cover and bring to a boil.

4Reduce heat and simmer 15 to 20 minutes, until the lentils are fully cooked, adding more water if the mixture is too thick.
