Ingredients

  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 Tbsp. oil
  • 3 c. boiling water
  • 1 c. dry lentils, washed
  • 1 Tbsp. dried mint
  • 1 Tbsp. curry powder
  • 1 tsp. turmeric
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1 c. Velveeta cheese, cubed
  • 1 small jar hot picante sauce

Directions

    In a medium sized pan, fry onion and garlic in oil until brown.

    Add water, lentils and the remaining ingredients except cheese and picante sauce.

    Cover and bring to a boil.

    Reduce heat and simmer 15 to 20 minutes, until the lentils are fully cooked, adding more water if the mixture is too thick.
