Lentil Salad

Ingredients

  • 2 1/2 c. dried lentils
  • 3 carrots, peeled and quartered
  • 1 medium onion, peeled and quartered
  • 3 cloves
  • 1 1/2 qt. chicken stock
  • 1 bay leaf
  • 2 tsp. dried thyme
  • 1/3 c. white wine vinegar
  • 3 garlic cloves, peeled and crushed
  • 1/2 c. walnut oil
  • salt and pepper to taste
  • 1 c. thinly sliced scallions
  • 1 c. shelled walnut halves
  • chopped parsley

Directions

    Rinse and sort lentils.

    Place lentils in large pot with carrots, onions, cloves, chicken stock, bay leaf and thyme. Bring to boil; reduce to simmer.

    Cook 25 minutes.

    When lentils are done, drain and discard carrot, onion, cloves and bay leaf.
