Lentil Salad

Ingredients
- 2 1/2 c. dried lentils
- 3 carrots, peeled and quartered
- 1 medium onion, peeled and quartered
- 3 cloves
- 1 1/2 qt. chicken stock
- 1 bay leaf
- 2 tsp. dried thyme
- 1/3 c. white wine vinegar
- 3 garlic cloves, peeled and crushed
- 1/2 c. walnut oil
- salt and pepper to taste
- 1 c. thinly sliced scallions
- 1 c. shelled walnut halves
- chopped parsley
Directions

1Rinse and sort lentils.

2Place lentils in large pot with carrots, onions, cloves, chicken stock, bay leaf and thyme. Bring to boil; reduce to simmer.

3Cook 25 minutes.

4When lentils are done, drain and discard carrot, onion, cloves and bay leaf.
