Libby's Boiled Fruit Cake

Ingredients

  • 125 g butter
  • 500 g mixed fruit
  • 1 teaspoon cinnamon
  • 12 teaspoon ground cloves
  • 1 cup skim milk
  • 1 teaspoon mixed spice
  • 12 teaspoon nutmeg
  • 14 cup dark rum
  • 1 teaspoon bicarbonate of soda
  • 2 eggs, beaten
  • 2 -3 bananas, mashed
  • 12 cup apple, cooked
  • 1 cup plain flour
  • 1 cup self-rising flour

Directions

    Place the butter, mixed fruit, cinnamon, cloves, milk, mixed spice and nutmeg in a large saucepan and bring to the boil.

    Put a lid on the saucepan and simmer very gently for 5 minutes.

    Cool a little.

    Add the rum and bi-carb.

    Mix well then leave to cool completely.

    Add eggs, apple and banana.

    Mix well.

    Add the flours.

    Mix well.

    Placed in a greased & lined 20cm tin.

    Place in a pre-heated 180C oven and bake for approximately 1 1/2 hours.

    Leave in tin to cool.
