Light Beer Stew

Ingredients
- 1 lb. stew meat
- vegetable cooking spray
- 1 tsp. vegetable oil
- 1 c. chopped onion
- 1 (12 oz.) can light beer
- 2 bay leaves
- 1/2 tsp. dried whole thyme
- 1/2 tsp. ground pepper
- 1/4 tsp. salt
- 5 medium carrots, sliced
- 1/2 lb. mushrooms, sliced
- 2 tsp. cornstarch
- 2 Tbsp. water
Directions

1Cut meat into cubes.

2Coat heavy pan with cooking spray; add oil.

3Place over medium-high heat.

4When oil is hot, add meat; cook until well browned, turning to cook on all sides.

5Reduce heat to medium-low; add onion and cook until onion is tender and lightly browned.

6Stir in beer, spices, carrots and mushrooms; bring to a boil.

7Cover; reduce heat and simmer 1 to 1 1/2 hours. Combine cornstarch and water; stir until blended.

8Stir into meat mixture.

9Cook uncovered 10 minutes, stirring occasionally. Remove bay leaves before serving.
