Light Bright Shrimp Salad

Ingredients
- 2/3 c. cooked shrimp
- 1/4 c. diced green pepper
- 2 Tbsp. safflower or peanut oil
- 3/4 tsp. salt
- lettuce leaves
- 1/2 c. sliced celery
- 1/4 c. chopped green onion
- 2 Tbsp. lemon juice
- 1/4 tsp. pepper
- 8 slices pineapple
Directions

1Combine shrimp, celery, green pepper and onion.

2Pour in oil and toss until all ingredients are lightly coated.

3Add lemon juice, salt and pepper.

4Continue tossing until well mixed. Arrange 2 slices of pineapple on each of 4 lettuce lined salad plates.

5Spoon shrimp mixture over pineapple.

6Makes 4 servings of 250 calories each.
