- 4 chicken breast, skinless, boneless, halves
- 2/3 c. uncooked rice
- 1 bag (16 oz.) frozen broccoli, carrots, water chestnuts and red peppers combination
- 1/3 c. bottle Italian dressing
- 1 can (2.8 oz) French fried onions
- 1 3/4 c. chicken broth or bouillon
Directions

1Place chicken breasts in an 8 x 12 inch baking dish.

2Pour dressing over chicken.

3Bake uncovered at 400° for 20 minutes. Remove from oven, place rice, vegetables, 1/2 can of onions around and under chicken.

4Pour broth over all.

5Bake uncovered for 25 minutes.

6Top with remaining onions.

7Bake 2 or 3 minutes longer. Serve.
