- 6 Tbsp. soy margarine
- 1 c. sugar
- 1 1/4 c. flour
- 1/3 c. cocoa
- 1 tsp. baking soda
- 1 c. low-fat milk
- 1/2 tsp. vanilla extract
- powdered sugar
- dash of salt
Directions

1Heat oven to 350°.

2Line muffin pans with paper bake cups. Melt margarine, remove from heat and stir in sugar.

3Combine flour, cocoa, baking soda and dash of salt; add alternately with milk and vanilla to mixture in saucepan.

4Beat until well blended. Spoon into bake cups.

5Bake 18 to 20 minutes.

6Cool on wire rack, sift powdered sugar over top.

7Yields 18 cupcakes.
