Light Guacamole

Ingredients

  • 1 10-ounce package frozen peas
  • 1 jalapeno
  • 1 medium clove garlic
  • 2 tablespoons lime juice
  • 1 ripe medium avocado
  • 1/2 cup light sour cream
  • 2 to 3 green onions to yield 1/4 cup
  • Few sprigs cilantro to yield 2 tablespoons chopped
  • Sprinkle salt
  • Freshly ground black pepper

Directions

    Steam peas for a couple of minutes over boiling water.

    Wash, trim and seed jalapeno.
  3. 3
    With food processor running, process as much of the jalapeno as you like, and mince the garlic.

    Add drained peas, lime juice, avocado and sour cream, and process until smooth.

    Chop the green onion and cilantro, and stir into the mixture.

    Season with salt and pepper.
