- 6 Tbsp. sugar, divided
- 2 c. peeled, sliced peaches
- 1 tsp. lemon juice
- 2 1/3 c. buttermilk baking mix
- 1/2 c. skim milk
- 4 Tbsp. melted low calorie margarine
Directions

1Preheat oven to 375°.

2Grease 9-inch square baking pan.

3In medium bowl, combine 2 tablespoons sugar, peaches and lemon juice; set aside.

4In another medium bowl, stir together baking mix, remaining 4 tablespoons sugar, milk and margarine until blended. Pour batter into 9-inch square baking pan.

5Bake 15 to 20 minutes. Cool cake on wire rack.

6To serve, cut cake into squares; top each with 1/4 cup peach mixture.

7Makes 8 servings (240 calories and 9 g fat per serving).
